D.O.C Mornington

D.O.C Mornington is a sister business of D.O.C. Carlton and Carlton Espresso. Based on Main Street, Mornington and comprising a pizza restaurant and mozzarella bar, gourmet deli and produce shop, D.O.C Mornington has swiftly become a new favourite with locals and visitors alike.

TONY Nicolini is all about creating the Italian experience. The tomatoes come from San Marzano, the truffle oil from Chianti, heck, he even imports the waiters, sponsoring young Italian hospitality students to work in his restaurants.

Nicolini wood-fired his way into Melbourne’s heart in 1997 at Pizza Espresso with thin-crust pizzas topped ‘‘the Italian way’’: minimally, and with ingredients of excellent quality.

Since then, he’s built a mini empire of eateries — Carlton Espresso, DOC Carlton and his latest venture, DOC Mornington — that delivers a dash of debonair Euro flair and just the right amount of theatre. (Remember those waiters? During the World Cup, they’d often burst into a rousing chorus of the Italian national anthem.)
Food is a big part of the show at DOC Mornington, a glamorous expansion of the empire. It’s a ‘‘concept store’’ — Nicolini’s words — showcasing first-class Italian and local produce.

In the sexy, glass-fronted salumi room about 30 legs of San Daniele prosciutto hang like stalactites alongside all manner of cured meats and big wheels of cheese.

To the right is a picture-postcard produce store, the black shelves stocked with an impressive array of oils, dry goods and Italian plonk.

To the left is a bank of dark-wood tables with bentwood chairs and, down the back, a dedicated pizza chef paddling pizzas in and out of the oven. It’s a Moretti — a carbon-friendly version that mimics a wood oven so you can still cook directly on stone. All part of getting the bubbled bases just right.

Pizza Salsiccia comes smeared with a full coverage of creamy broccoli paste dotted with melted mozzarella, knobbly chunks of pork sausage and a swizzle of olive oil.
