Jackalope welcomes Executive Chef Simon Tarlington to Doot Doot Doot

Tarlington’s food is best known to Melbourne mouths from his time at Paringa Estate and the Highline at South Yarra’s Railway Hotel.

Counting Gordon Ramsay, Peter Gilmore and Michelin-starred Clare Smyth among his mentors, he is leading the Doot Doot Doot team with a refreshed menu format to guide guests on a gastronomic journey.
