Recipe: Cheesecake with gingerbread, local berries and baby basil

MAIN RIDGE DAIRY

INGREDIENTS
500g ‘Cashmere’ fresh goats’ curd (direct from the Main Ridge Dairy)
500ml thickened cream
250ml crème fraiche
220g castor sugar
1 vanilla pod
1 tbsp honey
Gingerbread biscuits
Local berries

Baby basil leaves

METHOD

Combine all ingredients in a mix master and whip until it forms a
whipped cream consistency.  Pour into a tray (approx. 5cm deep) and cover with glad wrap.  Set in the refrigerator for a minimum of 2 hours before using.

Quenelle spoonfuls of cheesecake mix onto some crumbled gingerbread and servewith fresh local berries and picked baby basil leaves.

Main Ridge Dairy is the only commercial dairy operating in the region. We milk 180 goats on our 130 acre farm and the fresh milk is turned into a range of handcrafted cheeses all produced on the property. In the cheesery we offer tastings, cheese platters and cheese sales.
