Olive Tapenade

from the team at Green Olive at Red Hill

INGREDIENTS
4 cloves of garlic
Zest and juice of 2 lemons
Pinch of salt
1 tbsp cracked black pepper
1 tbsp of honey
4 cups of pitted Green Olive at Red Hill Manzanilla Olives
1 cup of Green Olive at Red Hill Extra Virgin Cold Pressed Olive Oil

METHOD
Blend garlic, zest, salt, and pepper with extra-virgin olive oil until it forms a paste.
Add olives, juice and honey, then purée.
Use remaining oil and blend until the desired consistency is reached.
Check the flavour and season further as desired.
