Zac and Jacqui Poulier have had a lifelong love affair with everything foodie.  Their passion comes through in everything they do.  Zac’s career began 'way back' at the acclaimed Rockman’s Regency hotel where he trained under chef Trevor Bilney, before he headed to the UK, where he was head chef and Sous chef at venues such as Harvey Nichols 5th floor, Oxo Tower brasserie and Pacific Oriental.  Jacqui started working in hotel kitchens as an after school job in her early teens and this is where her life long passion for the industry began.

A brisk fresh morning in late winter sees a small group of rugged up people pile into a plush vehicle and be whisked away to a secret location to seek 'black gold'.  They are, of course, the Truffle Hunters.  While real gold hunting may involve a metal detector, this group has the services of a rather handsome dog named Thomas.

Here's a hearty winter solstice recipe to try

Max Paganoni is renowned for this dish.  Inspired by his trips to Tuscany, it is one of the staple winter menu items for his restaurant "Max's at Red Hill Estate".  It is made all the more delicious if you can get your hands on some of Max's own Award-winning Extra Virgin Olive Oil, pork from Mornington Prime Cuts (Mornington), and herbs and potatoes from Peninsula Fresh Organics in Baxter, or Bentons Rise Farm (Tuerong).  With the shortest day of the year upon us, give it a try!
