At the helm of the Trofeo Estate kitchen is 'Hatted' Head Chef Andrew Doughton. As a true pioneer of Mornington Peninsula hospitality, Andrew spent 15 successful years defining the region’s dining scene as the chef and owner of Red Hill’s iconic hatted restaurant, The Long Table. At Trofeo Estate, he brings his signature refined "paddock-to-plate" philosophy to life. His style focuses heavily on sourcing pristine, hyperlocal, and seasonal Peninsula produce to craft texturally complex, modern-regional dishes. Each element is deliberately designed to strip away pretense, allowing the pure, unadulterated flavours of the region to perfectly balance and elevate the estate's famous terracotta amphora wines.
