An Evening Conceived with Intention
This is not simply a dinner. It is a culinary narrative, one shaped by terroir, by season, and by the considered hand of "Hatted" Head Chef Andy Doughton, now completing his inaugural year leading Trofeo Estate’s kitchen. Doughton’s philosophy is rooted in the land that surrounds him. Each course in this curated four-course menu is inviting guests to slow down, savour, and connect.
Where the Peninsula Meets Périgord
At the heart of this year’s menu is a collaboration with Flinders Truffles — artisan cultivators whose French Black Truffles are harvested from the mist-veiled rolling hills of Flinders.
These are not mere garnishes. Woven with intention, the truffles bring an earthy, aromatic depth that transforms the familiar into the exceptional. It is a meeting of two neighbours, united by a shared reverence for craft and place.
