Fresh from being named Australia’s Best Country/Regional Dining Wine List 2026, Beverage Director Amy Oliver has hand-selected five exceptional Italian wines from Laura’s award-winning collection of more than 650 wines, spanning some of Italy’s most celebrated wine regions, from Veneto and the renowned vineyards of Barolo to Sicily.

Usually, a dish is created first and the sommelier finds the wine to match. For this special dinner at Laura, that process is being turned around. Each wine has been selected first, with Culinary Director Josep Espuga and Laura’s culinary team creating a course specifically around it, drawing inspiration from the ingredients, flavours and culinary traditions of the region it comes from. The result brings Italian culinary tradition together with the produce of the Mornington Peninsula. Expect Italian classics with a distinctly local expression, including Cacio e-Mountain pepe, which reimagines the much-loved cacio e pepe with mountain pepper, wattle seed, wild asparagus from the Estate garden and Australian pecorino.
